Spumante Brut

11% vol – 750 ml

Brut sparkling wine produced with a blend of grapes, mainly Glera and a percentage of other grapes with a strong aptitude for sparkling wine production, selected for their quality. The winemaking process involves soft pressing of the grapes with immediate separation of the must from the skins, followed by cold settling and fermentation in temperature-controlled steel tanks. The second fermentation, which lasts three months, takes place in steel tanks using the Martinotti-Charmat method, followed by bottling.

The fine and persistent perlage accompanies an intense bouquet, with notes of green apple and citrus. The dry and harmonious taste, with a residual sugar of 10 g/l, makes this sparkling wine ideal for aperitifs, light appetizers, and fish dishes. An elegant and refined profile, an expression of the best Brut sparkling wine tradition.

Why is a sparkling wine defined as brut?

Extra Dry, Brut, Extra Brut: names we see printed on sparkling wine labels, but what do they mean? The residual sugar is a key parameter that determines the sweetness of a sparkling wine and, consequently, its ideal pairing.

Extra Brut, with less than 6 grams per liter, is the driest and rarest, decisive, perfect with crustaceans or fresh cheeses.

Brut, with a residual sugar between 6 and 12 grams per liter, is fresh and dry, ideal for fish or sushi appetizers. Silver is a Brut sparkling wine with a residual sugar of 10 grams per liter, therefore easy and pleasant to drink.

Extra Dry (12-17 g/l) is probably the most common: not too dry, with a softness that pairs well with seafood risottos or pastries, despite seeming “dry” in its name.

Dry (17-32 g/l) increases in sweetness, balanced, excellent with fruit or light desserts.

Demi Sec, with 32-50 grams, is sweet and rare, a companion for rich desserts.

These terms, derived from Champagne, are common also in Italy and are a way to distinguish at a glance the main characteristic of the sparkling wine: the degree of sweetness. Each style finds its moment to shine.
