Prosecco with residual sugar below 3 grams per liter, boasting great personality and sharp acidity, made with 100% Glera grapes from hillside vineyards at 370 meters above sea level.
A revival of the ancient “brut nature” sparkling wine tradition, resulting in a distinctly dry sparkling wine. Fermentation takes place in stainless steel tanks, followed by secondary fermentation in autoclave using the Martinotti method for 90-100 days.
A subtle, elegant perlage, zesty notes of lemon, white flowers and bread crusts. Sustained acidity, length and persistence. A Conegliano-Valdobbiadene Docg spumante that can almost be described as extreme.

Here Glera reigns over steep slopes, often hand-harvested, alongside local varieties like Verdiso and Bianchetta, with a few rows of Perera adding a refined touch. Ancient soils of sandstone and marl, paired with the nearby Prealps, lend the wine a unique mineral freshness. Two souls coexist: Conegliano, softer and rounder, and Valdobbiadene, crisp and upright. At its heart, in Valdobbiadene, shines Cartizze: a 106-hectare enclave between Santo Stefano, Saccol, and San Pietro di Barbozza, crafting a “grand cru” both savory and refined. Cartizze, with hints of apple, pear, and rose, lifts Prosecco to rare elegance, thanks to well-drained soils and a cool microclimate. Asolo Prosecco Superiore DOCG
On the Asolo Hills, spanning Treviso and Vicenza, the Asolo Prosecco Superiore DOCG unfolds across 16 municipalities at altitudes between 100 and 450 meters. Here Glera rules the gentle slopes, beside Bianchetta standing out among native varieties, with hints of Perera rounding out the mix, on marly-calcareous soils. Compared to the rugged slopes of Conegliano Valdobbiadene, the mild climate enhances a refined Prosecco, Spumante or Frizzante. It brings notes of white flowers, peach, and a touch of honey, with a smooth yet dry finish. This is Prosecco’s understated, elegant soul, less heralded but just as noble, shaped by a land steeped in history and beauty.

It’s no coincidence that the Conegliano Valdobbiadene DOCG regulations were recently updated to include this category, with a sugar range of 0-6 g/L, acknowledging its value and growing demand.
At first glance, the label’s design reflects its straightforward, uncompromising nature. On the palate, ZB delivers a fine bubble, pronounced minerality, and a dry finish that enhances the purity of the fruit. Soft and harmonious, with 8 g/L of residual sugar, Brut Bajo is the most approachable of the three, while still retaining the hallmarks of a Brut, placing it in the mid-to-upper range of the Conegliano Valdobbiadene DOCG regulations (up to 12 g/L). Its notes of apple and pear blend into a balanced sip, with a fine bubble that enhances its freshness and liveliness. The label, designed by the artist Bajo, with his intense and emotionally charged faces, reflects the wine’s fruity harmony and convivial spirit—a burst of flavor that invites sharing.
