Brut Bajo
Prosecco Superiore
Conegliano Valdobbiadene DOCG
Spumante Brut
11,5% vol – 750 ml
Prosecco Superiore Brut, crafted solely from Glera grapes in the heart of the Conegliano Valdobbiadene DOCG, from the Zanotto family vineyards perched at 370 meters above sea level.
Its sparkling character is achieved through a slow fermentation process in autoclave, lasting 90-100 days, resulting in a refined sparkling wine with a residual sugar of 8 g/L.
Elegant perlage, pleasant acidity, with delicate floral aromas accompanied by notes of lime and apple. The low residual sugar gives a softness and persistence. An elegant spumante in-line with the best winemaking tradition of the Conegliano-Valdobbiadene hills.

“Brut Bajo”: Bubbles of Art
The “Brut Bajo” is more than just a Prosecco Superiore DOCG – it’s a sensory journey where the refined sparkle of bubbles meets the vivid pulse of art. Born from the collaboration between Riccardo Zanotto, a winemaker of excellence with a passion for art, and Fabio Baggio, known as Bajo, a multifaceted artist, this sparkling wine pays homage to creativity and the unique richness of its land.
Crafted from Glera grapes grown at 370 meters above sea level in the family vineyard, the “Brut Bajo” boasts a crisp freshness and distinct minerality, enhanced by a mere 8 grams of residual sugar per liter. What sets it apart is also its label – an original artwork by Bajo that transforms each bottle into a singular masterpiece.
Bajo, born in 1965, creates from his home in Romano d’Ezzelino, in the province of Vicenza. Trained in advertising graphics, photography, and the Venice Academy of Fine Arts, he wields color with untamed freedom, crafting enigmatic, distorted portraits that seem to hover in an imagined realm. His painting – a burst of signs and vibrations – blends echoes of Nordic Expressionism with pop influences, ranging from instinctive graffiti to a soul-searching depth.
The “Brut Bajo” label offers a glimpse into his world, beckoning one to dive into the emotions his art evokes. With every sip, it marries the pleasure of the palate with visual beauty, celebrating the excellence of Prosecco and the vision of an artist who has captured the essence of this remarkable territory.

Zanotto Collection: Three Personalities, One DNA
Riccardo Zanotto presents a collection of three sparkling wines, each with a distinct personality yet bound by the same territorial DNA: Brut Bajo, Brù, and ZB. These unique interpretations are born from Glera grapes grown in the vineyards of Tarzo, at 370 meters altitude, in the heart of the Prosecco Superiore Conegliano Valdobbiadene DOCG.
Brut Bajo: Harmony That Wins the Palate
Among the three sparklings, Brut Bajo stands out for its charm and approachability. With 8 g/L of residual sugar, it sits in the upper-mid range of the DOCG guidelines, striking a perfect balance between sweetness and freshness. Notes of apple and pear, wrapped in fine, persistent bubbles, make it especially pleasing to the palate—ideal for pairing with light desserts or a friendly toast. The label, designed by artist Bajo, features intense, emotion-filled faces that mirror the richness and vibrancy of this Prosecco Superiore. It’s a burst of flavor that engages the senses, much like the artist’s visages, which captivate and stir emotions.
Brù: The Vibrant Essence of the Land
Positioned between Brut Bajo and ZB, Brù captivates with its elegance and versatility. With 5 g/L of residual sugar, this harmonious and enveloping Brut showcases the freshness and minerality typical of its terroir. Its minimalist label, accented by a vibrant orange, reflects its modern, refined soul—perfect for pairing with appetizers or light first courses.
ZB: A Contemporary Revolution
For those who prefer drier, bolder flavors, ZB offers a daring choice. With less than 3 g/L of residual sugar, this Extra Brut defies convention, delivering a modern, sophisticated tasting experience. Its pronounced minerality and crisp finish make it an excellent match for aperitifs or to enhance the flavors of raw fish.
Three sparkling wines, three unique experiences, united by the excellence of the Conegliano Valdobbiadene DOCG. A sensory journey that begins with the quality of the grapes and evolves into three modern, refined interpretations, crafted to satisfy the most diverse palates.
