Fermentation in the bottle
11,5% vol – 750 ml
Latifondo is produced with Grillo grapes. After the soft pressing of the bunches, the fermentation begins in stainless steel tanks. A part of the must (20%) is separated and continues to age in oak barrels until the moment of the “draw”, when new must is added prior to bottling. The second fermentation takes place in the bottle and ages for another 24 months. The slight opaqueness of the spumante is a quality given the absence of degorgement or mechanical filtering. The residual sugar is around 8 g/lt, that puts it in the category of a Brut.
It pairs well with seafood appetisers and pasta; risotto creamed with olive oil and lemon-marinated scampi, oregano and capers; a good all-course wine, best appreciated with traditional mediterranean dishes and fish tartare.
